Ok, small chicken wings.
Same sauces, montreal and steak seasoning.
And chicken wings.
35-40% heat on 'que.
Put the wings on and season with the dry montreal seasoning. Flip over and season the other side while it is still moist and sticky. When the one side is starting to creep white (cooked chicken) flip them. Then useing a large flat spade spatulla, start flipping them en masse. Once you are sure they are cooked, move them all into the centre in a pyramid like pile. Dump the sauce on the top of them. And using the flipper, start flipping them in on themselves to put the sauce on all of them evenly.
Remove for 5 minutes to cool and relax the meat..
Serve with celery and carrots, and bowls of ranch dressing as the dip for all three.
