I had a can of coconut mulk (very cheap from T&T, like 70 cents) and I mixed in curry powder and some tumeric.  I then added onions in the baking/roasting pan, then my chicken drumsticks, then, carrots and potatoes.  Then, I poured my curry mixture.  You can add whatever spice you want to your mixture.  I only had curry and tumeric at home.  I wish that I had bay leaves and paprika.  Then, I bake at around 350 for about an hour and a half.  You can also serve over rice.  The mixture thickens out from the potatoes.

Ooh. Sounds yummy. I usually just dump everything into a pot and stir my curry sauces over it. Do you add curry leaves, purelife? That usually adds a bit of flavor.

Curry leaves?  I've never thought about that!  I'll check out Superstore the next time I'm there.  Thanks for the tip, Lise.  Is that the same as bay leaves?

Nope. Not the same as bay leaves. It has a distinct flavor, very different from bay leaves. I got them from an Indian store.

[/DIV]Au contraire... I can eat a lot when I'm really really hungry.  I often have to hold myself back.  I had to train my mind and tummy to stop eating so much and have more frequent "mini-meals"

  ADD:  You grow bay leaves, Lise?  Next time I see you, I would LOVE some bay leaves.

Hehe. No, no... I don't grow bay leaves. I accumulate them via bulk and dried process. If I remember next time, I'll bring some over to you.

  They're cheap at Superstore though. One bag will last you a long time. Just put them in an air-tight container and store. Make sure no water in the container.
