I have managed to make an ice bowl with flowers in them. It's really easy though and all you need is two bowls, one smaller than the other.
Fill smaller bowl with something heavy. Fill bigger bowl part-way with water then add flowers all around. Freeze overnight. Remove bowl by just tapping them gently or using warm water. You can fill the ice bowl with fruits of your choice.

That same idea is great for serving shrimp or seafood in the summertime. Another thing that looks cool, is to fill a milk carton with water, immerse a wine bottle (same shape as the one you will be serving) place ferns or herbs or whatever between the bottle and the milk carton. Remove wine bottle when frozen, and replace with wine you will be serving. Keeps wine icy cold and looks great too.
